Strawberry shortcake


2 1/2 cups strawberries, hulled and sliced
4 tbsp. sugar
4 eggs
1 1/2 cups sugar
1 tsp. vanilla
1 cup whole milk (3/4 cup 2% milk and 1/4 half-and-half work great as a substitute)
1/4 cup unsalted butter
2 cups all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
Whipped cream frosting
3 cups heavy whipping cream
5 tbsp. granulated sugar
1/2 tsp. vanilla extract


  1. In a medium bowl, gently mix sliced strawberries and 4 tbsp. granulated sugar. Cover and place in refrigerator for at least an hour.
    Preheat oven to 325 degrees Fahrenheit. Place cupcake liners in 18 standard-sized muffin tins.
  2. In a large mixing bowl, beat eggs at medium speed for four minutes until pale yellow and fluffy.
  3. Add sugar and continue beating for another four minutes or so until light and fluffy. Add the vanilla and beat for another few seconds.
  4. In a separate medium bowl, sift together the flour, baking powder, and salt.
  5. In a saucepan or in the microwave using low heat, melt the butter then add the milk and heat just until lukewarm.
  6. With the mixer on low speed, add the dry ingredients, followed by the milk and butter mixture. Beat just until combined. Batter will be fairly runny.
  7. Divide the batter evenly between 18 muffin cups.
  8. Bake for 15 – 18 minutes until a toothpick inserted into the center of a cupcake comes out clean.
  9. Let cupcakes stand in pan for 10 minutes, then remove the cupcakes from the pan and place on a wire rack. Cool completely.
  10. Make the whipped cream frosting. Beat the whipping cream with a stand mixer or hand mixer (affixed with the whisk attachment if you have one), until stiff peaks begin to form.
  11. Sprinkle in the sugar and vanilla and beat for another few seconds. Set aside.
  12. With a sharp serrated knife, slice off the tops of the cupcakes and set aside.
  13. Poke just the cupcake (not the top) five to six times with a bamboo skewer.
  14. Remove the strawberries from the refrigerator and spoon the liquid from the strawberries over each poked cupcake, about a teaspoon or two each.
  15. Spoon whipped cream over each cupcake, then, using your fingers, add a layer of sliced strawberries one by one. Carefully place the top back on the cupcake, then top with more whipped cream and more strawberries. Garnish with a tiny whole strawberry, if desired.
  16. Best served within two hours of assembling.

I once was on an elevator in a hospital and a deadman’s hand slapped me on the ass. He wasn’t strapped into the death cart properly and the elevator bumped and his hand had fallen out and hit me on the ass. (The death cart is a cart that is made to look like a patients bed but it hides a person who has died by lifting the poles to make the padding increase to cover the body underneath)

On a snowy and icy day while going down the back office stairs I slipped on ice and hit my butt on every metal step on the way down. Hit the landing so hard my shoes flew up and went down the next set of steps. I jumped up pretending like it didn’t hurt and told the vise president of the company I worked for at the time that I was completely find as he handed me my shoe. I went to my desk worked for all of 30 mins till couldn’t take it any longer. The VP offered to drive me to the ER. I was so embarrassed. So I said I wanted to go to my doctors first thinking he would let me drive myself since was on the other side of town. He drove me to my doctors office then I was then sent to the ER which my VP drove me to. Image me on a bed butt side up being wheeled to x-ray with my VP standing next to me. Loved him to death but I thin I could of handled the ER by myself. After the x-ray my wonderfully funny VP said well after today I can’t say I haven’t seen my employee’s butt before because I got to see your bones and all on the x-ray. He had done his hardest through this whole experience not to laugh or poke fun but had lost it that point. Honestly I was surprised he lasted that long he was always laughing. I was later informed that I had broken my butt bone and they gave me a wonderful donut to sit on for the next few weeks. The wonderful noise from that donut I got to endure over the next few weeks not to mention my VP had come up with a new joke every time I saw him. The killer part of this story was a few days after this incident at the company Christmas party the president of the company’s drunk wife fell on me and took me to the ground with her on top of me. She was out cold drunk. Who happened to be the first person there my VP trying to get her off of me and laughing the whole time. Afterwards he looked at me and said with a straight face maybe you should take a few days off before someone kills you. The universe wants you on the ground for some reason and willing to use other people to do it. We both busted out laughing. God love him he was a great boss who made you laugh when you think you couldn’t.


Life’s Paths

Life takes to you down many paths. Some are hard while others are easy and blissful. Every fork in the path a decision made that takes you on some adventure whether enlightening or a lesson learned. Sometimes your fortunate to have love ones be your compass and support along the way. While other times it feels like your alone going down the road till a beam of light brakes its way through showing you have so much to be thankful for. While we can’t always see the reasoning at the time for a certain path we took but it does reveal itself to connect to the dots so to speak at some point during life’s paths. We experience moments of happiness and moments that can be so low your afraid to look back. We have so many big moments and lots of little moments that have made us into who we are. Something that caused the little things that make us an individual with little quirks that make us special to someone out in the world. Sometimes looking back those little quirks are what we miss the most of those we have lost. This life path I’m on may at times scare the hell out of me and at others takes me to heights filled with so much love I think I could burst. I have never regretted a path I was on either by choice or by life’s demand. I have always looked for the lesson I was to have learned or the connection that brought me to joy. I’m on a road now that I see the outcome of a new destination but to get there I have to walk away from something I put my everything into building. I sacrificed so much along the path to building it. The anger I have of the betrayal that forced me to dream of this new road. All my sacrifices for the previous path meaning nothing, a failure and 2 stupid decisions that put me on this new road. I’m not one to hold on to anger. I don’t like being so mad I want to explode. I have always been one who let the anger go. It’s not worth holding onto it. See it as a lesson. But this time I’m having a really hard time letting it go. There is so much of it. It’s clouding my train of thought and my ability to see clearly the road ahead. Hopefully getting my thoughts out and acknowledging it will set it free from me. I know I will forgive the Betrayal and will take the lessons learned as time passes. I don’t need the negativity. So this goes out to the universe and to life’s new paths I look forward to the next big adventure that’s in my near future. Hopefully anger free!



I have learned a life lesson. Never give your trust to anyone who doesn’t deserve it.



Today has been a day of inconveniences starting with ridiculous requests ending with an uninvited guest at the front door. How I wish I could just skip to tomorrow….



Sometimes in life I think we just loose site of where we are and are looking for that moment in time that we can hold on to just a little longer. A start place we can find our way back from.


The Volcano God

So my families new joke: you went to Hawaii and destroyed it for everyone else. It’s kind of funny because I had joked before I left that if anything would go wrong while I was there it would be an eruption considering my karma. I didn’t actually think it would happen! The day I left literally the first of many fissures opened up. I am choosing to believe I can see some what in the future! Now when is the right lotto numbers combo going to pop into my head. Lol



Last week my mentor and friend was killed in a car accident. The words rung around in my head for days. The shock of it. I wasn’t prepared to hear those words. He had survived heart surgery in January. The last time I saw him at lunch he was so happy and glowed with internal light. Throughout the last twenty years I have known him he was so positive and supportive. He was humble. You could never give him a complement without one in return. He never really liked complements. He would give you this look that was shy every time you gave him one. He had so many looks. My favorite was his amazed look. It was this wide eyed expression of wonder and amazement. He got this look every time you told him something you were going to do he never thought about doing with a program you were discussing or idea or picture. He truly cared for everyone of his students not just about their education but their life. He took an interest and supported them. He touched everyone of us with his gentle heart. I will miss him so much. As a friend he was a loving and truly wonderful. He could make you laugh and he smiled with his whole soul. He beamed so bright when there was an adventure talk and laughed with a deep within joy. He never pushed you in a direction but instead said well and let you come to a conclusion on your own. My heart hurts thinking of the future without him.
